Welcome back for another episdoe of Menu Plan Monday!
With the cooler weather, we've taken a turn toward more comfort foods. Most of the time comfort foods = lots of carbs & butter. While I do enjoy both of these things, we try to keep our comfort foods on the healthy side. Whole grains, lean proteins, reduction in use of butter or unhealthy oils and bulking up our meals with veggies definitely helps. My husband is a meat-and-potatoes kind of guy and he actually prefers my lightened-up versions of most recipes.
Monday: Chicken Meatball Subs, Salad (rollover from last week)
Tuesday: Crockpot Cube Steak, Mashed Potatoes, Corn
Wednesday: Chicken Baseballs, Green Beans
Friday: Panko-Crusted Pork Chops with Creamy Herb Dressing, Brown Rice, Broccoli
Sunday: Mother-in-Law's Birthday Celebration - Marinated Chicken Breasts, 7-Layer Salad, Baked Potatoes, Angel Food Cake, Strawberries
